Alchemy Immersive is a first-of-its-kind, in-person baking course crafted for serious bakers, chefs, and food entrepreneurs who want to master the art and science of gluten-free, vegan pastry.

Over four deeply immersive weeks, you’ll train inside Plant Alchemy’s sunlit kitchen in Goa — exploring the full spectrum of pastry techniques: from cookies and gelatos to entremets, petit gâteaux, sourdough breads, and bean-to-bar chocolate.

This is not just a baking course. It’s a technical, creative, and sensory transformation.


🔬 What You’ll Learn

Each week of Alchemy Immersive focuses on a core pastry category, building skill, precision, and creativity through hands-on practice, theory, tastings, and real-time feedback:


🍪 Week 1: Cookies, Brownies, Gelatos & Tea Cakes

Master foundational baking techniques while working with alternative flours, egg-free emulsions, dairy-free ganaches, and plant-based textures.
You’ll create:

  • Gourmet cookies like matcha pistachio, spiced almond biscotti, cookie sandwiches

  • Creative brownies: Bounty, pistachio kunafa, centre-filled strawberry bars

  • Vegan gelatos & sorbets: Pandan, matcha, tender coconut, pink guava chili

  • Moist tea cakes with layers: pistachio rose, lemon passionfruit, chocolate marble


🎂 Week 2: Celebration Cakes, Breads, & Cheesecakes

Learn how to build cakes that don’t collapse — even without gluten, dairy, or eggs.
Develop commercial breads and cheesecakes that hold up in hot kitchens and real-world use.
You’ll make:

  • Layered cakes with sponge, ganache, cremeaux, gel, mousseline

  • Gluten-free sourdough boules, focaccia, pizza, buns

  • Cold-set and baked cheesecakes using nut-based, dairy-free formulations


🥧 Week 3: Tarts, Petit Gâteaux, and Entremet

Explore refined, plated-style desserts made from clean ingredients.
You’ll create:

  • Tart shells with structured compotes and creamy fillings

  • Petit gâteaux with layers of glaze, mousse, sponge, and crunch

  • French style intricate entremets


🍫 Week 4: Bean-to-Bar Chocolate & Diabetic-Friendly Desserts

A unique week that merges technical skill with nutrition.
You’ll work on:

  • Roasting, conching, tempering, and moulding chocolate from scratch

  • Creating desserts with low-GI sugars (monk fruit, coconut sugar, date caramel)

  • Using functional herbs (ashwagandha, lion’s mane, reishi) in cheesecakes, truffles & mousse cakes

  • Designing a full 7-course plated dessert menu as your graduation project
